I love baking but I'm in the posession of this teenie tiny oven in Ghent, so I never baked something more decent than a pizza in it. Despite this fact I tried to make this bananabreadrecipe that I read on the blog of Jasmina. She and her twinsister post these uberyummie baking creations of them all the time and they just inspire people to get into their kitchen. Really, they should start a coffee-shop specialised in pastries. I pimped the recipe with some stuff that I had lingering around in my kitchencabinet.
This is what you need:
- 1 cup of oatmeal
- 1 1/4 cup of selfrising flower
- 1/2 cup of brow or cassonade sugar
- 1 egg, beaten
- 2 egg-whites, beaten into stiff peaks
- 1 ts. vanilla-essence
- 1/2 ts. salt
- 1/2 ts. baking powder
- 1 ts. cinnamon
- 2 hands of chopped nuts (hazelnuts, pecannuts, almonds, walnuts,...)
- 10 chopped dried apricots
- 3 ts. walnut oil
- 3 ripe banana's, mashed
This is how to make your banana-bread:
1. Preheat your oven to 180° C
2. Mix the oatmeal, flower, sugar, cinnamon, baking powder and salt in a large bowl.
3. Chop the nuts and the apricots and add them to the bowl.
4. In a separate small bowl beat the single egg, add the walnut oil, vanilla-essence and the 3 ripe banana's. Mash everything until you get a homogene mixture.
4.Then add the wet ingredients to the big bowl of dry ingredients and mix again until you get a homogene mixture.
5. Beat the two egg-whites with a mixer into stiff peaks (or if you don't have one, by hand -->nice work-out) and scoop them a few times trought the homogene mixture.
6. Grease a baking mold with some oil or butter and pour the mixture in it.
7. Bake in the preheated oven for about an hour. (If you stick a metal pin in the bread and it comes out dry, then your bananabread is ready)
Delicous still warm with some butter and honey (like Jasmina does) or for total guiltiness with some Nutella spread. Enjoy!
